Easy and Super Healthy Roasted Pepitas

Pepitas are also known in Spanish as pepita de calabaza, “little seed of squash” or pumpkin seeds. I stumbled upon Imagethis recipe one day because I accidentally purchased raw pumpkin seeds.which are flavorless, chewy and in my opinion inedible. So I thought would rectify the situation by spicing them up and roasting them myself. The result turned out to be roasted pepitas that were deliciously addictive and an instant family favorite. Whats even better is that my toddler absolutely adores them and they happen to be one of the most nutritious nuts or dare I say foods you can eat. This recipe is surprisingly easy

Ingredients

  • Raw Pumpkin Seeds (usually purchased from a health food store and often found in the bulk section)
  • Real Salt
  • Pepper
  • EVOO
  • Chili Flakes (optional, usually not added to the recipe when prepared for children)

Preheat your oven to 425. Place your raw pumpkin seeds in a large bowl and apply a generous amount of salt and pepper. Toss the seed so you coat all sides. Sparingly apply chili flakes. Next apply generous amounts of EVOO and toss the seeds so you coat all sides. Spread the pumpkin seeds out on a large baking pan. You want them spread rather thin so they roast evenly. Bake the pepitas at 425 for 5 minutes or until golden brown.
